Granola is a great way to increase fiber and protein in your diet. Store bought brands often are very high in sugars. Making granola at home is very fast and easy, and you can personalize the granola to your taste preferences.
|2 cups large flake rolled oats
*2 cups nuts and seeds:
– ¼ cup walnuts
– ¼ cup cashews
– ½ cup almonds
– ½ cup pumpkin seeds
– ½ cup sunflower seeds
|**3 tbsp honey
2 tbsp peanut or almond butter
1 tsp vanilla
2 tbsp water
1/3 cup coconut oil
¼ tsp cinnamon
Few dashes of nutmeg
*This is where you can really personalize the granola to your preferences. You can use any mix of nuts and/or seeds that you enjoy.
**Like yours less sweet or are really watching your sugar intake? Just include less! See if increasing the spices or vanilla helps to compensate for the flavour or embrace the savory granola instead.
- Preheat oven to 350⁰
- Mix all dry ingredients in a large bowl, then add wet ingredients and stir until the whole mixture is as evenly covered in oil and nut butter as possible.
- Spread mixture evenly onto a large baking sheet and cook in the oven for 25-30 minutes, making sure to stir the mixture every few mintues.
Keep in an airtight container for 2-3 weeks.
